  • Heavy cream - 100 ml
  • Parmesan cheese - 50 grams, grated
  • Red pepper flakes - 1/4 teaspoon (optional)
  • Salt - to taste
  • Black pepper - to taste
  • Fresh basil - for garnish

Steps

  1. Bring a large pot of salted water to a boil and cook the gluten-free penne pasta according to package instructions until al dente. Drain and set aside, reserving a little pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped shallot, sautéing until fragrant and translucent, about 2-3 minutes.
  3. Pour in the crushed tomatoes and vodka, stirring to combine. Let the mixture simmer for about 5 minutes, allowing the alcohol to cook off.
  4. Reduce the heat and stir in the heavy cream, mixing until the sauce is smooth and heated through. Season with salt, black pepper, and red pepper flakes (if using).
  5. Add the cooked penne to the sauce, tossing to coat the pasta evenly. If the sauce is too thick, add a little reserved pasta water to reach the desired consistency.
