- Vodka - 60 ml
- Heavy cream - 100 ml
- Parmesan cheese - 50 grams, grated
- Red pepper flakes - 1/4 teaspoon (optional)
- Salt - to taste
- Black pepper - to taste
- Fresh basil - for garnish
Steps
- Bring a large pot of salted water to a boil and cook the gluten-free penne pasta according to package instructions until al dente. Drain and set aside, reserving a little pasta water.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped shallot, sautéing until fragrant and translucent, about 2-3 minutes.
- Pour in the crushed tomatoes and vodka, stirring to combine. Let the mixture simmer for about 5 minutes, allowing the alcohol to cook off.
- Reduce the heat and stir in the heavy cream, mixing until the sauce is smooth and heated through. Season with salt, black pepper, and red pepper flakes (if using).
- Add the cooked penne to the sauce, tossing to coat the pasta evenly. If the sauce is too thick, add a little reserved pasta water to reach the desired consistency.
- Remove from heat and stir in the grated Parmesan cheese. Adjust seasoning if necessary.
- Serve immediately, garnished with fresh basil and additional Parmesan if desired.
