- Penne pasta - 160 grams
- Extra virgin olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Lemon - 1 medium, zested and juiced
- Parmesan cheese - 30 grams, grated
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Red pepper flakes - optional, for heat
Steps
- Bring a large pot of salted water to a boil and cook the penne pasta according to package instructions until al dente, usually about 8-10 minutes.
- While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
- Add the lemon zest and juice to the skillet, stirring to combine, and cook for another minute.
- Once the pasta is done, reserve 1/2 cup of the pasta cooking water, then drain the pasta and add it to the skillet with the lemon sauce.
- Toss the pasta in the sauce, adding reserved pasta water a little at a time until the desired consistency is reached.
- Stir in the grated Parmesan cheese, and season with salt, black pepper, and red pepper flakes if using.
- Remove from heat and fold in the chopped parsley before serving.
