Ingredients

  • Lamb shoulder - 400 grams
  • Olive oil - 2 tablespoons
  • Fresh rosemary - 2 sprigs, chopped
  • Fresh thyme - 1 sprig, chopped
  • Garlic - 2 cloves, minced
  • Lemon juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Zucchini - 1 medium, sliced
  • Bell pepper - 1 medium, sliced
  • Red onion - 1 small, cut into wedges

Steps

  1. In a bowl, combine olive oil, chopped rosemary, thyme, minced garlic, lemon juice, salt, and black pepper to create a marinade.
  2. Cut the lamb shoulder into 2-inch cubes and add it to the marinade. Ensure all pieces are well-coated. Cover and let it marinate in the refrigerator for at least 30 minutes.
  3. Preheat the grill to medium-high heat.
  4. While the grill is heating, prepare the vegetables by tossing the zucchini, bell pepper, and red onion with a drizzle of olive oil, salt, and pepper.
  5. Once the grill is hot, thread the marinated lamb onto skewers, alternating with the marinated vegetables.
  6. Grill the skewers for about 10-12 minutes, turning occasionally, until the lamb reaches your desired doneness and the vegetables are tender and slightly charred.
  7. Remove from the grill and let rest for a few minutes before serving.
