Steps
- Preheat your oven to 200°C (400°F).
- Wash and peel the potatoes, then cut them into 2 cm cubes.
- In a large bowl, combine the olive oil, lemon juice, lemon zest, minced garlic, salt, and black pepper.
- Add the cubed potatoes to the bowl and toss until they are well coated with the mixture.
- Spread the potatoes evenly on a baking sheet lined with parchment paper.
- Roast in the preheated oven for about 25-30 minutes, or until golden and tender, stirring halfway through for even cooking.
