  • Garlic (minced) - 2 cloves
  • Fresh parsley (chopped) - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Wash and peel the potatoes, then cut them into 2 cm cubes.
  3. In a large bowl, combine the olive oil, lemon juice, lemon zest, minced garlic, salt, and black pepper.
  4. Add the cubed potatoes to the bowl and toss until they are well coated with the mixture.
  5. Spread the potatoes evenly on a baking sheet lined with parchment paper.
  6. Roast in the preheated oven for about 25-30 minutes, or until golden and tender, stirring halfway through for even cooking.
