Ingredients

  • All-purpose flour - 200 grams
  • Powdered sugar - 50 grams
  • Baking powder - 5 grams
  • Salt - 1/4 teaspoon
  • Coconut oil - 70 grams (melted)
  • Almond milk - 80 milliliters
  • Vanilla extract - 1 teaspoon
  • Lemon zest - 1 teaspoon
  • Silken tofu - 150 grams
  • Maple syrup - 30 grams
  • Cornstarch - 15 grams
  • Almond extract - 1/2 teaspoon

Steps

  1. In a mixing bowl, combine the all-purpose flour, powdered sugar, baking powder, and salt.
  2. Add the melted coconut oil, almond milk, vanilla extract, and lemon zest to the dry ingredients. Mix until a dough forms.
  3. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  4. While the dough is chilling, prepare the filling by blending the silken tofu, maple syrup, cornstarch, and almond extract until smooth.
  5. Preheat the oven to 180°C (350°F).
  6. Remove the dough from the refrigerator and divide it into two pieces, one slightly larger than the other.
  7. Roll out the larger piece of dough on a floured surface to about 5 mm thickness and cut out two circles to fit into your tart molds.
  8. Press the dough circles into the molds and fill each with the tofu filling, smoothing the top.
  9. Roll out the smaller piece of dough and cut out circles to cover the filling. Seal the edges by pinching them together.
  10. Bake in the preheated oven for 25-30 minutes or until golden brown.
  11. Allow to cool slightly before serving. Dust with powdered sugar if desired.
