- All-purpose flour - 200 grams
- Powdered sugar - 50 grams
- Baking powder - 5 grams
- Salt - 1/4 teaspoon
- Coconut oil - 70 grams (melted)
- Almond milk - 80 milliliters
- Vanilla extract - 1 teaspoon
- Lemon zest - 1 teaspoon
- Silken tofu - 150 grams
- Maple syrup - 30 grams
- Cornstarch - 15 grams
- Almond extract - 1/2 teaspoon
Steps
- In a mixing bowl, combine the all-purpose flour, powdered sugar, baking powder, and salt.
- Add the melted coconut oil, almond milk, vanilla extract, and lemon zest to the dry ingredients. Mix until a dough forms.
- Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
- While the dough is chilling, prepare the filling by blending the silken tofu, maple syrup, cornstarch, and almond extract until smooth.
- Preheat the oven to 180°C (350°F).
- Remove the dough from the refrigerator and divide it into two pieces, one slightly larger than the other.
- Roll out the larger piece of dough on a floured surface to about 5 mm thickness and cut out two circles to fit into your tart molds.
- Press the dough circles into the molds and fill each with the tofu filling, smoothing the top.
- Roll out the smaller piece of dough and cut out circles to cover the filling. Seal the edges by pinching them together.
- Bake in the preheated oven for 25-30 minutes or until golden brown.
- Allow to cool slightly before serving. Dust with powdered sugar if desired.
