- All-purpose flour - 200 grams
- Unsalted butter - 100 grams, chilled and cubed
- Granulated sugar - 50 grams
- Egg yolks - 2
- Baking powder - 1 teaspoon
- Milk - 100 ml
- Vanilla extract - 1 teaspoon
- Cornstarch - 20 grams
- Salt - a pinch
- Powdered sugar - for dusting
Steps
- In a large bowl, combine the all-purpose flour, baking powder, and salt. Add the chilled butter and rub it into the flour until the mixture resembles coarse crumbs.
- Mix in the granulated sugar and the egg yolks until the dough comes together. If it's too crumbly, add a tablespoon of cold water at a time until it forms a smooth ball.
- Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
- While the dough is chilling, prepare the custard filling. In a saucepan, whisk together the milk, cornstarch, sugar, and vanilla extract over medium heat until it thickens. Remove from heat and let it cool slightly.
- Preheat the oven to 180°C (350°F).
- Roll out the chilled dough on a floured surface to about 3-5 mm thickness. Cut out circles large enough to line the bottom and sides of your baking molds.
- Place the dough circles in the molds, fill each with the custard filling, and cover with another smaller circle of dough. Pinch the edges to seal.
- Bake in the preheated oven for 25-30 minutes or until golden brown.
- Let them cool slightly before removing from the molds. Dust with powdered sugar before serving.
