Ingredients

  • All-purpose flour - 150 grams
  • Almond flour - 50 grams
  • Agave syrup - 50 grams
  • Coconut oil - 50 grams, melted
  • Almond milk - 100 ml
  • Baking powder - 1 teaspoon
  • Vanilla extract - 1 teaspoon
  • Lemon zest - 1 teaspoon
  • Orange zest - 1 teaspoon
  • Powdered sugar - for dusting

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large mixing bowl, combine the all-purpose flour, almond flour, and baking powder.
  3. In another bowl, mix the melted coconut oil, agave syrup, almond milk, vanilla extract, lemon zest, and orange zest until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until a dough forms.
  5. Knead the dough for a few minutes until smooth, then wrap it in plastic wrap and refrigerate for 30 minutes.
  6. Roll out the chilled dough on a floured surface to about 5mm thickness.
  7. Cut the dough into circles and line small tartlet pans with the circles, pressing the dough into the edges.
  8. Fill each tartlet with a mixture of almond cream made from blended almond flour, agave syrup, and lemon zest.
  9. Bake the tartlets in the preheated oven for 20-25 minutes or until golden.
  10. Allow to cool slightly before dusting with powdered sugar and serving.
