- Almond flour - 50 grams
- Agave syrup - 50 grams
- Coconut oil - 50 grams, melted
- Almond milk - 100 ml
- Baking powder - 1 teaspoon
- Vanilla extract - 1 teaspoon
- Lemon zest - 1 teaspoon
- Orange zest - 1 teaspoon
- Powdered sugar - for dusting
Steps
- Preheat the oven to 180°C (350°F).
- In a large mixing bowl, combine the all-purpose flour, almond flour, and baking powder.
- In another bowl, mix the melted coconut oil, agave syrup, almond milk, vanilla extract, lemon zest, and orange zest until well combined.
- Gradually add the wet ingredients to the dry ingredients, stirring until a dough forms.
- Knead the dough for a few minutes until smooth, then wrap it in plastic wrap and refrigerate for 30 minutes.
- Roll out the chilled dough on a floured surface to about 5mm thickness.
- Cut the dough into circles and line small tartlet pans with the circles, pressing the dough into the edges.
- Fill each tartlet with a mixture of almond cream made from blended almond flour, agave syrup, and lemon zest.
- Bake the tartlets in the preheated oven for 20-25 minutes or until golden.
- Allow to cool slightly before dusting with powdered sugar and serving.
