Steps
- Preheat the oven to 180°C (350°F).
- In a saucepan, melt the butter over low heat and set aside to cool slightly.
- In a mixing bowl, combine flour, baking powder, sugar, and a pinch of salt.
- In another bowl, whisk together the eggs, milk, vanilla extract, and lemon zest.
- Add the melted butter to the egg mixture and stir to combine.
- Gradually add the wet mixture to the dry ingredients, mixing until just combined.
- Pour the batter into a greased baking dish and bake for 25-30 minutes or until golden brown and a toothpick comes out clean.
- While the cake is baking, prepare the custard by heating the milk in a saucepan until warm.
- In a bowl, whisk together the remaining eggs, sugar, and a tablespoon of flour until smooth.
- Slowly add the warm milk to the egg mixture, whisking continuously to avoid curdling.
- Return the mixture to the saucepan and cook over medium heat, stirring constantly until it thickens.
- Once thickened, remove from heat and let cool.
- Once the cake is done and cooled, slice it in half horizontally and fill it with the custard.
- Dust the top with powdered sugar before serving.
