Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a saucepan, melt the butter over low heat and set aside to cool slightly.
  3. In a mixing bowl, combine flour, baking powder, sugar, and a pinch of salt.
  4. In another bowl, whisk together the eggs, milk, vanilla extract, and lemon zest.
  5. Add the melted butter to the egg mixture and stir to combine.
  6. Gradually add the wet mixture to the dry ingredients, mixing until just combined.
  7. Pour the batter into a greased baking dish and bake for 25-30 minutes or until golden brown and a toothpick comes out clean.
  8. While the cake is baking, prepare the custard by heating the milk in a saucepan until warm.
  9. In a bowl, whisk together the remaining eggs, sugar, and a tablespoon of flour until smooth.
  10. Slowly add the warm milk to the egg mixture, whisking continuously to avoid curdling.
  11. Return the mixture to the saucepan and cook over medium heat, stirring constantly until it thickens.
  12. Once thickened, remove from heat and let cool.
  13. Once the cake is done and cooled, slice it in half horizontally and fill it with the custard.
  14. Dust the top with powdered sugar before serving.
