  • Cocoa powder - 1 tablespoon
  • Dark chocolate (70% cocoa) - 30 grams, chopped
  • Chopped almonds - 20 grams
  • Fresh mint leaves - for garnish

Steps

  1. Rinse the quinoa under cold water and drain well.
  2. In a medium saucepan, combine the quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is fluffy and water is absorbed.
  3. In a mixing bowl, combine the cooked quinoa, ricotta cheese, honey, lemon zest, and vanilla extract. Mix until well combined and smooth.
