- Spaghetti - 160 grams
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Canned whole tomatoes - 400 grams
- Black olives - 100 grams, pitted and sliced
- Capers - 2 tablespoons, rinsed
- Red chili flakes - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
- Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
- Pour in the canned tomatoes, including the juice, and break them up with a spoon. Let simmer for about 5 minutes.
- Stir in the sliced olives, capers, and red chili flakes. Season with salt and black pepper to taste. Simmer for another 5 minutes.
- Once the pasta is cooked, reserve 1/2 cup of pasta water and then drain the spaghetti.
- Add the drained spaghetti to the skillet with the sauce, tossing to combine. If the sauce is too thick, add a little reserved pasta water to reach desired consistency.
- Remove from heat, sprinkle with fresh parsley, and serve immediately.
