Ingredients

  • Spaghetti - 160 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Canned whole tomatoes - 400 grams
  • Black olives - 100 grams, pitted and sliced
  • Capers - 2 tablespoons, rinsed
  • Red chili flakes - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  4. Pour in the canned tomatoes, including the juice, and break them up with a spoon. Let simmer for about 5 minutes.
  5. Stir in the sliced olives, capers, and red chili flakes. Season with salt and black pepper to taste. Simmer for another 5 minutes.
  6. Once the pasta is cooked, reserve 1/2 cup of pasta water and then drain the spaghetti.
  7. Add the drained spaghetti to the skillet with the sauce, tossing to combine. If the sauce is too thick, add a little reserved pasta water to reach desired consistency.
  8. Remove from heat, sprinkle with fresh parsley, and serve immediately.
