Ingredients

  • All-purpose flour - 200 grams
  • Unsalted butter - 100 grams, softened
  • Granulated sugar - 80 grams
  • Eggs - 1 large
  • Baking powder - 1 teaspoon
  • Vanilla extract - 1 teaspoon
  • Salt - 1/4 teaspoon
  • Fruit jam (your choice) - 100 grams, for filling

Steps

  1. In a large mixing bowl, combine the flour, baking powder, and salt.
  2. In another bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the egg and vanilla extract to the butter mixture, mixing well until combined.
  4. Gradually incorporate the dry ingredients into the wet ingredients, mixing until a dough forms.
  5. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  6. Preheat the oven to 180°C (350°F).
  7. After chilling, roll out two-thirds of the dough on a floured surface to about 5 mm thick and transfer it to a tart pan, pressing it into the base and up the sides.
  8. Spread the fruit jam evenly over the base of the dough.
  9. Roll out the remaining dough and cut it into strips to create a lattice pattern over the jam filling.
  10. Bake in the preheated oven for 25-30 minutes or until golden brown.
  11. Allow to cool slightly before slicing and serving.
