- All-purpose flour - 200 grams
- Unsalted butter - 100 grams, softened
- Granulated sugar - 80 grams
- Eggs - 1 large
- Baking powder - 1 teaspoon
- Vanilla extract - 1 teaspoon
- Salt - 1/4 teaspoon
- Fruit jam (your choice) - 100 grams, for filling
Steps
- In a large mixing bowl, combine the flour, baking powder, and salt.
- In another bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the egg and vanilla extract to the butter mixture, mixing well until combined.
- Gradually incorporate the dry ingredients into the wet ingredients, mixing until a dough forms.
- Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
- Preheat the oven to 180°C (350°F).
- After chilling, roll out two-thirds of the dough on a floured surface to about 5 mm thick and transfer it to a tart pan, pressing it into the base and up the sides.
- Spread the fruit jam evenly over the base of the dough.
- Roll out the remaining dough and cut it into strips to create a lattice pattern over the jam filling.
- Bake in the preheated oven for 25-30 minutes or until golden brown.
- Allow to cool slightly before slicing and serving.
