- Coconut oil - 100 grams, solid
- Powdered sugar - 80 grams
- Vanilla extract - 1 teaspoon
- Salt - 1/4 teaspoon
- Cold water - 2 tablespoons
Steps
- Preheat the oven to 180°C (350°F).
- In a large mixing bowl, combine the all-purpose flour and powdered sugar.
- Add the solid coconut oil to the flour mixture and use your fingers or a pastry cutter to blend until the mixture resembles coarse crumbs.
- Stir in the vanilla extract and salt, then gradually add cold water, one tablespoon at a time, mixing until the dough comes together.
- Shape the dough into a ball, wrap in plastic wrap, and refrigerate for 30 minutes.
- On a lightly floured surface, roll out the chilled dough to about 5mm thickness.
- Transfer the rolled dough into a tart or pie pan, trimming any excess from the edges.
- Prick the bottom of the dough with a fork to prevent bubbling during baking.
- Bake in the preheated oven for 20-25 minutes or until lightly golden.
- Remove from the oven and let cool before filling with your choice of fruit or jam.
