Ingredients

  • All-purpose flour - 200 grams
  • Coconut oil - 100 grams, solid
  • Powdered sugar - 80 grams
  • Vanilla extract - 1 teaspoon
  • Salt - 1/4 teaspoon
  • Cold water - 2 tablespoons

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large mixing bowl, combine the all-purpose flour and powdered sugar.
  3. Add the solid coconut oil to the flour mixture and use your fingers or a pastry cutter to blend until the mixture resembles coarse crumbs.
  4. Stir in the vanilla extract and salt, then gradually add cold water, one tablespoon at a time, mixing until the dough comes together.
  5. Shape the dough into a ball, wrap in plastic wrap, and refrigerate for 30 minutes.
  6. On a lightly floured surface, roll out the chilled dough to about 5mm thickness.
  7. Transfer the rolled dough into a tart or pie pan, trimming any excess from the edges.
  8. Prick the bottom of the dough with a fork to prevent bubbling during baking.
  9. Bake in the preheated oven for 20-25 minutes or until lightly golden.
  10. Remove from the oven and let cool before filling with your choice of fruit or jam.
