- Celery - 1 stalk, diced
- Vegetable broth - 500 milliliters
- Tomato paste - 2 tablespoons
- Dried oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Nutritional yeast - 2 tablespoons (optional for a cheesy flavor)
- Fresh basil - for garnish
Steps
- Preheat your oven to 180°C (350°F).
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery, sautéing for about 5-7 minutes until softened.
- Stir in the diced potatoes, tomato paste, dried oregano, salt, and black pepper. Cook for another 5 minutes, mixing well.
- Pour in the vegetable broth and bring the mixture to a boil. Add the pasta and cook for about 10 minutes, stirring occasionally until the pasta is al dente and the potatoes are tender.
- Transfer the mixture to a baking dish, and sprinkle nutritional yeast on top if using.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
- Remove the foil and bake for an additional 10 minutes, until the top is slightly golden.
- Let it cool for a few minutes before garnishing with fresh basil and serving.
