  • Carrot - 1 medium (diced)
  • Celery - 1 stalk (diced)
  • Olive oil - 2 tablespoons
  • Dried oregano - 1 teaspoon
  • Dried basil - 1 teaspoon
  • Red pepper flakes - 1/4 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Nutritional yeast - 2 tablespoons (for a cheesy flavor)
  • Fresh parsley - for garnish (optional)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion, diced carrot, and diced celery; sauté for about 5-7 minutes until softened.
