- Celery - 1 stalk (diced)

- Dried oregano - 1 teaspoon
- Dried basil - 1 teaspoon
- Red pepper flakes - 1/4 teaspoon
- Salt - to taste
- Black pepper - to taste
- Nutritional yeast - 2 tablespoons (for a cheesy flavor)
- Fresh parsley - for garnish (optional)
Steps
- Preheat the oven to 180°C (350°F).
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, diced carrot, and diced celery; sauté for about 5-7 minutes until softened.
- Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the canned diced tomatoes, vegetable broth, drained cannellini beans, dried oregano, dried basil, red pepper flakes, salt, and black pepper. Bring to a simmer and let cook for 10 minutes.
- Meanwhile, cook the pasta in a separate pot according to package instructions until al dente. Drain and set aside.
- Combine the cooked pasta with the tomato and bean mixture, stirring well to combine. Taste and adjust seasoning if necessary.
- Transfer the mixture to a baking dish and sprinkle the top with nutritional yeast for a cheesy flavor.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
- Remove the foil and bake for an additional 10 minutes, until the top is slightly crispy.
