  • Vegetable broth - 600 milliliters
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Red pepper flakes - 1/4 teaspoon (optional)
  • Parmesan cheese - 30 grams, grated (for serving)
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. In a large pot, heat the extra virgin olive oil over medium heat.
  2. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  3. Pour in the vegetable broth and bring it to a boil.
  4. Once boiling, add the Ditalini pasta and cook according to package instructions, usually about 10 minutes.
  5. Five minutes before the pasta is done, add the broccoli florets to the pot.
  6. Season the soup with salt, black pepper, and red pepper flakes if using.
  7. Once the pasta and broccoli are tender, remove the pot from heat.
  8. Ladle the soup into bowls and top with grated Parmesan cheese and chopped parsley before serving.
