- Cherry tomatoes - 150 grams, halved
- Spinach - 100 grams
- Parmesan cheese - 30 grams, grated
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Red pepper flakes - 1/4 teaspoon (optional)
- Fresh basil - a handful, chopped
Steps
- Begin by bringing a large pot of salted water to a boil. While waiting, chop the cauliflower into small florets.
- Once the water is boiling, add the cauliflower florets and cook for about 5-7 minutes until tender. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the halved cherry tomatoes to the skillet and cook for 3-4 minutes until they start to soften.
- Stir in the cooked cauliflower and spinach, cooking for another 3-4 minutes until the spinach is wilted.
- Season the mixture with salt, black pepper, and red pepper flakes (if using).
- Remove from heat and stir in the grated Parmesan cheese until melted and well combined.
