  • Zucchini - 1 small, diced
  • Spinach - 100 grams, fresh
  • Vegetable broth - 500 milliliters
  • Diced tomatoes - 200 grams, canned
  • Italian seasoning - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese - 30 grams, grated (optional)

Steps

  1. Cook the whole wheat pasta according to package instructions until al dente, then drain and set aside.
  2. In a large pot, heat the olive oil over medium heat and add the minced garlic and chopped onion. Sauté until the onion is translucent, about 3-4 minutes.
  3. Add the diced carrot and celery to the pot, cooking for an additional 5 minutes until softened.
  4. Stir in the diced zucchini and cook for another 3 minutes, then add the vegetable broth and diced tomatoes.
