- Spinach - 100 grams, fresh
- Vegetable broth - 500 milliliters
- Diced tomatoes - 200 grams, canned
- Italian seasoning - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese - 30 grams, grated (optional)
Steps
- Cook the whole wheat pasta according to package instructions until al dente, then drain and set aside.
- In a large pot, heat the olive oil over medium heat and add the minced garlic and chopped onion. Sauté until the onion is translucent, about 3-4 minutes.
- Add the diced carrot and celery to the pot, cooking for an additional 5 minutes until softened.
- Stir in the diced zucchini and cook for another 3 minutes, then add the vegetable broth and diced tomatoes.
- Season the soup with Italian seasoning, salt, and black pepper. Bring to a simmer and let cook for 10 minutes.
- Add the fresh spinach and cooked pasta to the pot, stirring to combine. Cook for an additional 2-3 minutes until the spinach is wilted.
