- Black pepper - to taste
- Nutritional yeast - 2 tablespoons (optional, for a cheesy flavor)
Steps
- Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente.
- While the pasta cooks, heat the olive oil in a large skillet over medium heat.
- Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
- Add the sliced zucchini to the skillet and cook for 5-7 minutes, stirring occasionally, until tender and slightly golden.
- Once the pasta is cooked, reserve 1/2 cup of the pasta water and drain the rest.
- Add the drained pasta to the skillet with the zucchini, and toss to combine.
- Stir in the chopped mint, lemon juice, and reserved pasta water a little at a time until the desired consistency is reached.
- Season with salt and black pepper to taste, and add nutritional yeast if using.
- Serve warm, garnished with additional mint leaves if desired.
