  • Zucchini - 2 medium, sliced
  • Zucchini flowers - 6, cleaned and chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Vegetable broth - 200 milliliters
  • Parmesan cheese - 30 grams, grated (optional for kosher)
  • Salt - to taste
  • Black pepper - to taste
  • Fresh basil - a handful, chopped

Steps

  1. Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  3. Add the sliced zucchini to the skillet and cook for about 5-7 minutes, stirring occasionally, until they are tender.
  4. Pour in the vegetable broth and bring to a simmer. Add the chopped zucchini flowers and cook for another 2-3 minutes until they are wilted.
  5. Once the pasta is done, reserve 1/2 cup of the pasta water, then drain the spaghetti.

  7. Season with salt, black pepper, and chopped fresh basil. If desired, sprinkle with grated Parmesan cheese before serving.
