Ingredients

  • Pasta (spaghetti or penne) - 160 grams
  • Zucchini - 2 medium (approximately 250 grams)
  • Feta cheese - 100 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cherry tomatoes - 150 grams, halved
  • Fresh basil - a handful, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta is cooking, wash and slice the zucchini into thin rounds.
  3. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
  4. Add the sliced zucchini to the skillet and cook for 5-7 minutes until they are tender and slightly golden.
  5. Add the cherry tomatoes to the skillet and cook for an additional 3-4 minutes until they are soft.
  6. Once the pasta is cooked, reserve a cup of pasta water, then drain the pasta.
  7. Add the drained pasta to the skillet with the zucchini and tomatoes. Toss to combine and add reserved pasta water as needed to create a light sauce.
  8. Crumble the feta cheese over the pasta and gently mix it in. Season with salt, black pepper, and lemon juice to taste.
  9. Remove from heat and stir in the chopped fresh basil before serving.
