Ingredients

  • Whole wheat pasta - 150 grams
  • Zucchini - 200 grams, sliced
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Parmesan cheese - 30 grams, grated
  • Salt - to taste
  • Black pepper - to taste
  • Fresh basil - a handful, chopped

Steps

  1. Bring a large pot of salted water to a boil and add the whole wheat pasta. Cook according to package instructions until al dente, usually around 8-10 minutes.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the sliced zucchini to the skillet and cook for 5-7 minutes, stirring occasionally, until the zucchini is tender and slightly golden.
  4. Once the pasta is cooked, reserve about 1/2 cup of pasta water, then drain the pasta and add it to the skillet with the zucchini.
  5. Toss the pasta and zucchini together, adding reserved pasta water a little at a time to create a light sauce. Season with salt and black pepper to taste.
  6. Remove from heat and stir in the grated Parmesan cheese and chopped basil, mixing well to combine.
  7. Serve immediately, garnished with additional Parmesan and basil if desired.
