  • Fresh parsley - 2 tablespoons, chopped
  • Red pepper flakes - 1/4 teaspoon
  • Lemon - 1, juiced
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Soak the vongole in cold water for about 30 minutes to allow them to expel any sand.
  2. In a large pot, bring salted water to a boil and cook the spaghetti according to package instructions until al dente.
  3. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  4. Add the minced garlic and red pepper flakes to the skillet, sautéing for 1-2 minutes until fragrant, but not browned.
  5. Add the soaked vongole to the skillet, cover, and cook for about 5-7 minutes until the clams open up.
  6. Once the clams are open, add the lemon juice, chopped parsley, salt, and black pepper to taste.
  7. Drain the spaghetti, reserving a cup of pasta water, and add the spaghetti to the skillet with the clams.
  8. Toss everything together, adding reserved pasta water as needed to create a light sauce.
  9. Serve immediately, garnished with extra parsley if desired.
