  • Cherry tomatoes - 200g, halved
  • Garlic - 2 cloves, minced
  • Extra virgin olive oil - 2 tablespoons
  • Fresh basil leaves - a handful, torn
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - a pinch (optional)
  • Grated Parmesan cheese - for serving (optional)

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté for about 30 seconds until fragrant, being careful not to burn it.
  4. Add the halved cherry tomatoes to the skillet and cook for about 5-7 minutes until they begin to soften.
  5. Stir in the drained tuna, breaking it up gently with a fork, and cook for another 2-3 minutes until heated through.
  6. Once the pasta is cooked, reserve 1/2 cup of pasta water and then drain the pasta.
  7. Add the drained pasta to the skillet with the tuna and tomato mixture, tossing to combine.
  8. If the dish seems dry, add some reserved pasta water to reach your desired consistency.
  9. Season with salt, black pepper, and red pepper flakes if using. Stir in the torn basil leaves.
  10. Serve immediately, garnished with grated Parmesan cheese if desired.
