Ingredients

  • Spaghetti - 160 grams
  • Canned tuna in olive oil - 200 grams, drained
  • Garlic - 2 cloves, minced
  • Extra virgin olive oil - 3 tablespoons
  • Cherry tomatoes - 150 grams, halved
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente, about 8-10 minutes.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat and add the minced garlic. Sauté for about 1 minute until fragrant, being careful not to burn the garlic.
  3. Add the cherry tomatoes to the skillet and cook for another 3-4 minutes until they start to soften.
  4. Stir in the drained tuna and cook for an additional 2-3 minutes, breaking up the tuna gently with a fork.
  5. Once the pasta is cooked, reserve 1/2 cup of the pasta water and then drain the spaghetti.
  6. Add the drained spaghetti to the skillet with the tuna and tomatoes, tossing to combine. If the mixture seems dry, add reserved pasta water a little at a time until desired consistency is reached.
  7. Season with salt, black pepper, and lemon juice, and stir in the chopped parsley just before serving.
