- Spaghetti - 160 grams
- Canned tuna in olive oil - 200 grams, drained
- Garlic - 2 cloves, minced
- Extra virgin olive oil - 3 tablespoons
- Cherry tomatoes - 150 grams, halved
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente, about 8-10 minutes.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat and add the minced garlic. Sauté for about 1 minute until fragrant, being careful not to burn the garlic.
- Add the cherry tomatoes to the skillet and cook for another 3-4 minutes until they start to soften.
- Stir in the drained tuna and cook for an additional 2-3 minutes, breaking up the tuna gently with a fork.
- Once the pasta is cooked, reserve 1/2 cup of the pasta water and then drain the spaghetti.
- Add the drained spaghetti to the skillet with the tuna and tomatoes, tossing to combine. If the mixture seems dry, add reserved pasta water a little at a time until desired consistency is reached.
- Season with salt, black pepper, and lemon juice, and stir in the chopped parsley just before serving.
