- Pasta (spaghetti or penne) - 160 grams
- Firm tofu - 200 grams
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Cherry tomatoes - 200 grams, halved
- Fresh basil - 10 grams, chopped
- Nutritional yeast - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Red pepper flakes - 1/2 teaspoon (optional)
Steps
- Press the tofu for 10 minutes to remove excess water, then cut it into bite-sized cubes.
- In a bowl, marinate the tofu cubes with 1 tablespoon of olive oil, salt, black pepper, and nutritional yeast for 10 minutes.
- Cook the pasta according to package instructions in a pot of salted boiling water until al dente, then drain and set aside.
- In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
- Add the marinated tofu to the skillet and cook for about 5-7 minutes, turning occasionally until golden brown.
- Stir in the halved cherry tomatoes and cook for another 3-4 minutes until they soften.
- Add the cooked pasta to the skillet, toss everything together, and cook for an additional 2-3 minutes to combine the flavors.
- Remove from heat, stir in the chopped fresh basil, and adjust seasoning with salt, black pepper, and red pepper flakes as desired.
- Serve immediately, garnished with extra fresh basil and a sprinkle of nutritional yeast if desired.
