Ingredients

  • Pasta (spaghetti or penne) - 160 grams
  • Firm tofu - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Cherry tomatoes - 200 grams, halved
  • Fresh basil - 10 grams, chopped
  • Nutritional yeast - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - 1/2 teaspoon (optional)

Steps

  1. Press the tofu for 10 minutes to remove excess water, then cut it into bite-sized cubes.
  2. In a bowl, marinate the tofu cubes with 1 tablespoon of olive oil, salt, black pepper, and nutritional yeast for 10 minutes.
  3. Cook the pasta according to package instructions in a pot of salted boiling water until al dente, then drain and set aside.
  4. In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  5. Add the marinated tofu to the skillet and cook for about 5-7 minutes, turning occasionally until golden brown.
  6. Stir in the halved cherry tomatoes and cook for another 3-4 minutes until they soften.
  7. Add the cooked pasta to the skillet, toss everything together, and cook for an additional 2-3 minutes to combine the flavors.
  8. Remove from heat, stir in the chopped fresh basil, and adjust seasoning with salt, black pepper, and red pepper flakes as desired.
  9. Serve immediately, garnished with extra fresh basil and a sprinkle of nutritional yeast if desired.
