Ingredients

  • Fusilli pasta - 200 grams
  • Taleggio cheese - 150 grams, diced
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh thyme - 1 teaspoon, chopped
  • Black pepper - to taste
  • Salt - to taste
  • Parmesan cheese - 30 grams, grated (for serving)
  • Fresh parsley - for garnish

Steps

  1. Bring a large pot of salted water to a boil and add the fusilli pasta. Cook according to package instructions until al dente, usually about 8-10 minutes.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  3. Once the garlic is fragrant, add the diced Taleggio cheese to the skillet. Stir gently until the cheese begins to melt and forms a creamy sauce.
  4. When the pasta is cooked, reserve 1/2 cup of pasta water and drain the rest. Add the drained pasta to the skillet with the melted Taleggio.
  5. Mix everything together, adding reserved pasta water a little at a time until the desired creamy consistency is achieved.
  6. Stir in chopped thyme, and season with salt and black pepper to taste.
  7. Serve immediately, topped with grated Parmesan cheese and garnished with fresh parsley.
