- Fusilli pasta - 200 grams
- Taleggio cheese - 150 grams, diced
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Fresh thyme - 1 teaspoon, chopped
- Black pepper - to taste
- Salt - to taste
- Parmesan cheese - 30 grams, grated (for serving)
- Fresh parsley - for garnish
Steps
- Bring a large pot of salted water to a boil and add the fusilli pasta. Cook according to package instructions until al dente, usually about 8-10 minutes.
- While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
- Once the garlic is fragrant, add the diced Taleggio cheese to the skillet. Stir gently until the cheese begins to melt and forms a creamy sauce.
- When the pasta is cooked, reserve 1/2 cup of pasta water and drain the rest. Add the drained pasta to the skillet with the melted Taleggio.
- Mix everything together, adding reserved pasta water a little at a time until the desired creamy consistency is achieved.
- Stir in chopped thyme, and season with salt and black pepper to taste.
- Serve immediately, topped with grated Parmesan cheese and garnished with fresh parsley.
