Ingredients

  • Pasta (spaghetti or penne) - 160 grams
  • Canned whole tomatoes - 400 grams
  • Garlic - 3 cloves, minced
  • Extra virgin olive oil - 2 tablespoons
  • Fresh basil leaves - 10 leaves, torn
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Red pepper flakes - 1/4 teaspoon (optional)
  • Sugar - 1 teaspoon (optional, to balance acidity)
  • Vegan Parmesan cheese - for serving (optional)

Steps

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute, being careful not to burn it.
  3. Add the canned whole tomatoes (with their juice) to the skillet. Use a wooden spoon to break the tomatoes apart into smaller pieces.
  4. Stir in the salt, black pepper, red pepper flakes (if using), and sugar (if using). Let the sauce simmer for about 10-15 minutes, stirring occasionally, until it thickens slightly.
  5. Add the torn basil leaves to the sauce and stir to combine. If the sauce is too thick, add a bit of the reserved pasta water to reach desired consistency.
  6. Combine the drained pasta with the sauce in the skillet, tossing to coat the pasta evenly. Cook together for an additional 1-2 minutes.
  7. Serve hot, with a sprinkle of vegan Parmesan cheese if desired.
