- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Parmesan cheese (grated) - 30 grams
- Salt - to taste
- Black pepper - to taste
- Red pepper flakes - optional, pinch
Steps
- Bring a large pot of salted water to a boil and add the pasta. Cook according to package instructions until al dente.
- While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Season with salt, black pepper, and red pepper flakes if using.
- Once the pasta is cooked, reserve 1/4 cup of the pasta water and drain the rest. Add the drained pasta to the skillet with the spinach.
- Pour in the reserved pasta water and lemon juice. Toss everything together until well combined, adding more salt and pepper to taste.
- Serve immediately, topped with grated Parmesan cheese.
