  • Fresh spinach - 200 grams
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Parmesan cheese (grated) - 30 grams
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - optional, pinch

Steps

  1. Bring a large pot of salted water to a boil and add the pasta. Cook according to package instructions until al dente.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Season with salt, black pepper, and red pepper flakes if using.
  4. Once the pasta is cooked, reserve 1/4 cup of the pasta water and drain the rest. Add the drained pasta to the skillet with the spinach.
  5. Pour in the reserved pasta water and lemon juice. Toss everything together until well combined, adding more salt and pepper to taste.
  6. Serve immediately, topped with grated Parmesan cheese.
