  • Cherry tomatoes - 200 grams, halved
  • Garlic - 2 cloves, minced
  • Extra virgin olive oil - 2 tablespoons
  • Fresh basil leaves - 10 leaves, torn
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - 1/4 teaspoon (optional)
  • Grated Parmesan cheese (optional, for serving) - 30 grams

Steps

  1. Bring a large pot of salted water to a boil for cooking the pasta.
  2. In a skillet, heat the extra virgin olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the halved cherry tomatoes to the skillet, season with salt, black pepper, and red pepper flakes (if using). Cook for about 5-7 minutes, stirring occasionally, until the tomatoes start to soften.
  4. While the tomatoes are cooking, add the pasta to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.
  5. Once the pasta is cooked, reserve 1/2 cup of the pasta cooking water, then drain the pasta.
  6. Add the drained pasta to the skillet with the tomato mixture. Gently fold in the canned mackerel, breaking it up slightly, and add reserved pasta water as needed to create a light sauce.
  7. Remove from heat and stir in the torn basil leaves. Adjust seasoning with more salt and pepper to taste.
