- Extra virgin olive oil - 2 tablespoons
- Fresh basil leaves - 10 leaves, torn
- Salt - to taste
- Black pepper - to taste
- Red pepper flakes - 1/4 teaspoon (optional)
- Grated Parmesan cheese (optional, for serving) - 30 grams
Steps
- Bring a large pot of salted water to a boil for cooking the pasta.
- In a skillet, heat the extra virgin olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the halved cherry tomatoes to the skillet, season with salt, black pepper, and red pepper flakes (if using). Cook for about 5-7 minutes, stirring occasionally, until the tomatoes start to soften.
- While the tomatoes are cooking, add the pasta to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.
- Once the pasta is cooked, reserve 1/2 cup of the pasta cooking water, then drain the pasta.
- Add the drained pasta to the skillet with the tomato mixture. Gently fold in the canned mackerel, breaking it up slightly, and add reserved pasta water as needed to create a light sauce.
- Remove from heat and stir in the torn basil leaves. Adjust seasoning with more salt and pepper to taste.
- Serve immediately, garnished with grated Parmesan cheese if desired.
