  • Canned mackerel in olive oil - 180 grams (drained)
  • Cherry tomatoes - 200 grams (halved)
  • Garlic - 2 cloves (minced)
  • Fresh parsley - 2 tablespoons (chopped)
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - a pinch (optional)

Steps

  1. Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
  4. Add the halved cherry tomatoes to the skillet and cook for about 5 minutes until they start to soften.
  5. Stir in the drained mackerel, breaking it into bite-sized pieces, and cook for an additional 3-4 minutes until heated through.
  6. Once the pasta is cooked, reserve about 1/2 cup of pasta water, then drain the spaghetti and add it to the skillet.
  7. Toss everything together, adding reserved pasta water little by little until the desired sauce consistency is reached.
  8. Finish with lemon juice, chopped parsley, salt, black pepper, and red pepper flakes if using. Toss to combine.
  9. Serve immediately, garnished with additional parsley if desired.
