- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Red pepper flakes - a pinch (optional)
Steps
- Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente.
- While the pasta is cooking, heat olive oil in a large skillet over medium heat.
- Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
- Add the halved cherry tomatoes to the skillet and cook for about 5 minutes until they start to soften.
- Stir in the drained mackerel, breaking it into bite-sized pieces, and cook for an additional 3-4 minutes until heated through.
- Once the pasta is cooked, reserve about 1/2 cup of pasta water, then drain the spaghetti and add it to the skillet.
- Toss everything together, adding reserved pasta water little by little until the desired sauce consistency is reached.
- Finish with lemon juice, chopped parsley, salt, black pepper, and red pepper flakes if using. Toss to combine.
- Serve immediately, garnished with additional parsley if desired.
