Ingredients

  • Spaghetti - 200 grams
  • Fresh sardines, cleaned and filleted - 200 grams
  • Extra virgin olive oil - 4 tablespoons
  • Garlic, minced - 2 cloves
  • Red chili flakes - 1/2 teaspoon
  • Pine nuts - 30 grams
  • Raisins - 30 grams
  • Fresh parsley, chopped - 2 tablespoons
  • Lemon zest - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Cook the spaghetti in a large pot of salted boiling water according to package instructions until al dente. Reserve 1/2 cup of the pasta water, then drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red chili flakes, sautéing until fragrant, about 1 minute.
  3. Add the sardine fillets to the skillet and cook for about 3-4 minutes, gently breaking them up with a spatula until they are cooked through.
  4. Stir in the pine nuts and raisins, cooking for an additional 2 minutes until the pine nuts are toasted and the raisins are plump.
  5. Add the cooked spaghetti to the skillet, along with the reserved pasta water. Toss everything together, ensuring the pasta is well coated with the sardine mixture.
  6. Remove from heat and stir in the chopped parsley and lemon zest. Season with salt and black pepper to taste.
  7. Serve immediately, garnished with additional parsley if desired.
