  • Garlic - 2 cloves, minced
  • Red bell pepper - 1, diced
  • Zucchini - 1 small, diced
  • Cherry tomatoes - 200 grams, halved
  • Fresh basil - 10 leaves, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Nutritional yeast - 2 tablespoons (optional)

Steps

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced vegan sausage and cook until browned, about 5-7 minutes.
  3. Add the minced garlic to the skillet and sauté for 1 minute until fragrant.
  4. Stir in the diced red bell pepper and zucchini, cooking for another 5 minutes until the vegetables are slightly tender.
  5. Add the halved cherry tomatoes and cook for an additional 3-4 minutes until they start to soften.
  6. Toss the cooked pasta into the skillet with the vegetable and sausage mixture. Stir well to combine, adding salt and black pepper to taste.
  7. Remove from heat and fold in the chopped fresh basil and nutritional yeast if using.
