- Garlic - 2 cloves, minced
- Red bell pepper - 1, diced
- Zucchini - 1 small, diced
- Cherry tomatoes - 200 grams, halved
- Fresh basil - 10 leaves, chopped
- Salt - to taste
- Black pepper - to taste
- Nutritional yeast - 2 tablespoons (optional)
Steps
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the sliced vegan sausage and cook until browned, about 5-7 minutes.
- Add the minced garlic to the skillet and sauté for 1 minute until fragrant.
- Stir in the diced red bell pepper and zucchini, cooking for another 5 minutes until the vegetables are slightly tender.
- Add the halved cherry tomatoes and cook for an additional 3-4 minutes until they start to soften.
- Toss the cooked pasta into the skillet with the vegetable and sausage mixture. Stir well to combine, adding salt and black pepper to taste.
- Remove from heat and fold in the chopped fresh basil and nutritional yeast if using.
- Serve immediately, garnished with additional basil if desired.
