Ingredients
- Pasta (short, such as penne or fusilli) - 200 grams
- Kosher Italian sausage - 150 grams
- Broccoli florets - 150 grams
- Garlic (minced) - 2 cloves
- Olive oil - 2 tablespoons
- Red pepper flakes - 1/4 teaspoon
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese (grated) - 30 grams
- Fresh parsley (chopped) - 2 tablespoons
Steps
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
- In the same pot, heat olive oil over medium heat. Add the minced garlic and red pepper flakes, and sauté for about 1 minute until fragrant.
- Remove the sausage from its casing and add to the pot. Cook, breaking it apart with a wooden spoon, until browned and cooked through, about 5-7 minutes.
- Add the broccoli florets to the pot and sauté for another 3-4 minutes until they are tender yet still vibrant green.
- Return the drained pasta to the pot, and toss everything together. If the mixture is dry, add some reserved pasta water to achieve the desired consistency.
- Season with salt and black pepper to taste. Remove from heat and stir in the grated Parmesan cheese and chopped parsley before serving.
