Ingredients

  • Pasta (short, such as penne or fusilli) - 200 grams
  • Kosher Italian sausage - 150 grams
  • Broccoli florets - 150 grams
  • Garlic (minced) - 2 cloves
  • Olive oil - 2 tablespoons
  • Red pepper flakes - 1/4 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese (grated) - 30 grams
  • Fresh parsley (chopped) - 2 tablespoons

Steps

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
  2. In the same pot, heat olive oil over medium heat. Add the minced garlic and red pepper flakes, and sauté for about 1 minute until fragrant.
  3. Remove the sausage from its casing and add to the pot. Cook, breaking it apart with a wooden spoon, until browned and cooked through, about 5-7 minutes.
  4. Add the broccoli florets to the pot and sauté for another 3-4 minutes until they are tender yet still vibrant green.
  5. Return the drained pasta to the pot, and toss everything together. If the mixture is dry, add some reserved pasta water to achieve the desired consistency.
  6. Season with salt and black pepper to taste. Remove from heat and stir in the grated Parmesan cheese and chopped parsley before serving.
