  • Italian sausage (dairy-free) - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic (minced) - 2 cloves
  • Red chili flakes - 1/2 teaspoon
  • Cherry tomatoes (halved) - 150 grams
  • Fresh basil (chopped) - 10 grams
  • Salt - to taste
  • Black pepper - to taste
  • Water - 2 liters

Steps

  1. Bring 2 liters of salted water to a boil in a large pot.
  2. Add the pasta and cook according to package instructions until al dente, usually about 8-10 minutes.
  3. While the pasta cooks, heat the olive oil in a large skillet over medium heat.
  4. Remove the sausage from its casing and crumble it into the skillet, cooking until browned and fully cooked, about 5-7 minutes.
  5. Add the minced garlic and red chili flakes to the skillet, sautéing for an additional minute until fragrant.
  6. Stir in the halved cherry tomatoes, cooking for another 3-4 minutes until they begin to soften.
  7. Once the pasta is cooked, reserve 1/2 cup of the pasta water and then drain the pasta.
  8. Add the cooked pasta to the skillet with the sausage and tomatoes, tossing to combine.
  9. If the mixture seems dry, add reserved pasta water a little at a time until you reach your desired consistency.
  10. Season with salt, black pepper, and chopped basil before serving.
