- Garlic - 2 cloves, minced
- Olive oil - 3 tablespoons
- Parmesan cheese (or a halal alternative) - 50 grams, grated
- Salt - to taste
- Black pepper - to taste
- Fresh basil - a handful, chopped
- Lemon juice - 1 tablespoon
- Water - for pasta cooking
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
- While the pasta is cooking, wash and trim the zucchini, then slice them into thin rounds.
- In a large skillet, heat the olive oil over medium heat, then add the minced garlic and sauté for 1 minute until fragrant.
- Add the sliced zucchini to the skillet and cook for about 5-7 minutes, stirring occasionally, until the zucchini is tender.
- Once the zucchini is cooked, lower the heat and add the grated Parmesan cheese, lemon juice, salt, and pepper, stirring until everything is well combined.
- When the pasta is ready, reserve a cup of pasta water and drain the rest. Add the pasta directly to the skillet with the zucchini sauce.
- Toss the pasta in the sauce, adding reserved pasta water a little at a time until the desired consistency is reached.
- Remove from heat, stir in the chopped fresh basil, and adjust seasoning if necessary before serving.
