  • Canned tuna in olive oil - 150g
  • Cherry tomatoes - 200g
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Fresh basil - 10g, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - 1/2 teaspoon (optional)

Steps

  1. Bring a large pot of salted water to a boil and cook the gluten-free pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant, being careful not to burn it.
  3. Add the cherry tomatoes to the skillet and cook for about 5-7 minutes until they start to soften and release their juices.
  4. Stir in the canned tuna along with its oil, breaking it apart gently with a fork. Cook for another 2-3 minutes to heat through.
  5. Add the cooked pasta to the skillet, tossing everything together. If the sauce is too thick, add reserved pasta water a little at a time until you reach your desired consistency.
  6. Season with salt, black pepper, and red pepper flakes if using. Stir in the chopped basil just before serving.
  7. Serve hot, garnished with additional fresh basil if desired.
