- Canned tuna in olive oil - 150g
- Cherry tomatoes - 200g
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Fresh basil - 10g, chopped
- Salt - to taste
- Black pepper - to taste
- Red pepper flakes - 1/2 teaspoon (optional)
Steps
- Bring a large pot of salted water to a boil and cook the gluten-free pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant, being careful not to burn it.
- Add the cherry tomatoes to the skillet and cook for about 5-7 minutes until they start to soften and release their juices.
- Stir in the canned tuna along with its oil, breaking it apart gently with a fork. Cook for another 2-3 minutes to heat through.
- Add the cooked pasta to the skillet, tossing everything together. If the sauce is too thick, add reserved pasta water a little at a time until you reach your desired consistency.
- Season with salt, black pepper, and red pepper flakes if using. Stir in the chopped basil just before serving.
- Serve hot, garnished with additional fresh basil if desired.
