Steps

  1. Cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the chopped mushrooms to the skillet and cook for about 5-7 minutes, stirring occasionally, until they are soft and browned.
  4. Stir in the nutritional yeast and truffle oil, mixing well to combine with the mushrooms.
  5. Pour in the almond milk and bring the mixture to a simmer. Allow it to cook for about 2-3 minutes, stirring occasionally, until slightly thickened.
  6. Add salt and black pepper to taste. If the sauce is too thick, gradually add reserved pasta water until desired consistency is reached.
  7. Add the cooked pasta to the skillet and toss to coat it evenly with the sauce. Cook for an additional 1-2 minutes to heat through.
  8. Remove from heat and stir in the chopped parsley. Serve hot, topped with vegan parmesan cheese if desired.
