Steps
- Cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the chopped mushrooms to the skillet and cook for about 5-7 minutes, stirring occasionally, until they are soft and browned.
- Stir in the nutritional yeast and truffle oil, mixing well to combine with the mushrooms.
- Pour in the almond milk and bring the mixture to a simmer. Allow it to cook for about 2-3 minutes, stirring occasionally, until slightly thickened.
- Add salt and black pepper to taste. If the sauce is too thick, gradually add reserved pasta water until desired consistency is reached.
- Add the cooked pasta to the skillet and toss to coat it evenly with the sauce. Cook for an additional 1-2 minutes to heat through.
- Remove from heat and stir in the chopped parsley. Serve hot, topped with vegan parmesan cheese if desired.
