Ingredients

  • Pasta (e.g., fettuccine or tagliatelle) - 200 grams
  • Taleggio cheese - 150 grams, diced
  • Heavy cream - 100 ml
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat and add the minced garlic. Sauté for about 1-2 minutes until fragrant but not browned.
  3. Add the heavy cream to the skillet and reduce the heat to low. Stir in the diced Taleggio cheese, allowing it to melt slowly into the cream.
  4. Once the cheese has melted and the sauce is creamy, season with salt and black pepper to taste.
  5. Drain the cooked pasta, reserving a little pasta water. Add the pasta to the skillet with the sauce and toss to combine. If the sauce is too thick, add a splash of reserved pasta water to reach desired consistency.
  6. Remove from heat and stir in the chopped parsley. Serve immediately, garnished with extra parsley if desired.
