Ingredients
- Pasta (e.g., fettuccine or tagliatelle) - 200 grams
- Taleggio cheese - 150 grams, diced
- Heavy cream - 100 ml
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat and add the minced garlic. Sauté for about 1-2 minutes until fragrant but not browned.
- Add the heavy cream to the skillet and reduce the heat to low. Stir in the diced Taleggio cheese, allowing it to melt slowly into the cream.
- Once the cheese has melted and the sauce is creamy, season with salt and black pepper to taste.
- Drain the cooked pasta, reserving a little pasta water. Add the pasta to the skillet with the sauce and toss to combine. If the sauce is too thick, add a splash of reserved pasta water to reach desired consistency.
- Remove from heat and stir in the chopped parsley. Serve immediately, garnished with extra parsley if desired.
