  • Whole wheat pasta - 180 grams
  • Fresh spinach - 200 grams
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Low-fat cream cheese - 100 grams
  • Parmesan cheese - 30 grams, grated
  • Nutmeg - 1/4 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Water - 1 liter

Steps

  1. Bring 1 liter of water to a boil in a large pot. Add a pinch of salt and the whole wheat pasta. Cook according to package instructions until al dente, usually around 10-12 minutes.
  2. While the pasta is cooking, wash the fresh spinach thoroughly and drain.
  3. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, but not browned.
  4. Add the spinach to the skillet and cook for about 5 minutes, stirring occasionally, until wilted.
  5. Lower the heat and add the low-fat cream cheese to the spinach mixture. Stir until the cream cheese is melted and well combined.
  6. Add the grated Parmesan cheese and nutmeg to the skillet, mixing until creamy. Season with salt and black pepper to taste.
  7. Once the pasta is cooked, reserve 1/2 cup of the pasta water and drain the rest. Add the drained pasta to the spinach sauce, tossing to combine. If the sauce is too thick, add a bit of the reserved pasta water until the desired consistency is reached.
  8. Serve immediately, garnished with additional Parmesan cheese if desired.
