- Low-fat cream cheese - 100 grams
- Parmesan cheese - 30 grams, grated
- Nutmeg - 1/4 teaspoon
- Salt - to taste
- Black pepper - to taste
- Water - 1 liter
Steps
- Bring 1 liter of water to a boil in a large pot. Add a pinch of salt and the whole wheat pasta. Cook according to package instructions until al dente, usually around 10-12 minutes.
- While the pasta is cooking, wash the fresh spinach thoroughly and drain.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, but not browned.
- Add the spinach to the skillet and cook for about 5 minutes, stirring occasionally, until wilted.
- Lower the heat and add the low-fat cream cheese to the spinach mixture. Stir until the cream cheese is melted and well combined.
- Add the grated Parmesan cheese and nutmeg to the skillet, mixing until creamy. Season with salt and black pepper to taste.
- Once the pasta is cooked, reserve 1/2 cup of the pasta water and drain the rest. Add the drained pasta to the spinach sauce, tossing to combine. If the sauce is too thick, add a bit of the reserved pasta water until the desired consistency is reached.
- Serve immediately, garnished with additional Parmesan cheese if desired.
