  • Spaghetti - 160 grams
  • Canned sardines in olive oil - 200 grams
  • Garlic - 2 cloves, minced
  • Red chili flakes - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon zest - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente.
  2. While the pasta is cooking, heat olive oil in a skillet over medium heat. Add minced garlic and red chili flakes, and sauté for about 1 minute until fragrant.
  3. Add the canned sardines to the skillet, breaking them into smaller pieces. Cook for another 2-3 minutes until heated through.
  4. Stir in lemon zest, lemon juice, and chopped parsley. Season with salt and black pepper to taste.
  5. Once the pasta is cooked, reserve 1/2 cup of pasta water and drain the rest. Add the pasta to the skillet with the sardine sauce.
  6. Toss everything together, adding reserved pasta water a little at a time to achieve the desired sauce consistency.
  7. Serve immediately, garnished with additional parsley if desired.
