- Canned sardines in olive oil - 200 grams
- Garlic - 2 cloves, minced
- Red chili flakes - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon zest - 1 teaspoon
- Lemon juice - 1 tablespoon
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente.
- While the pasta is cooking, heat olive oil in a skillet over medium heat. Add minced garlic and red chili flakes, and sauté for about 1 minute until fragrant.
- Add the canned sardines to the skillet, breaking them into smaller pieces. Cook for another 2-3 minutes until heated through.
- Stir in lemon zest, lemon juice, and chopped parsley. Season with salt and black pepper to taste.
- Once the pasta is cooked, reserve 1/2 cup of pasta water and drain the rest. Add the pasta to the skillet with the sardine sauce.
- Toss everything together, adding reserved pasta water a little at a time to achieve the desired sauce consistency.
- Serve immediately, garnished with additional parsley if desired.
