- Sea urchin roe (ricci di mare) - 100 grams
- Extra virgin olive oil - 3 tablespoons
- Garlic - 2 cloves, minced
- Red chili flakes - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and red chili flakes, and sauté for about 1 minute until fragrant, being careful not to burn the garlic.

- Gently toss the spaghetti in the skillet, adding the sea urchin roe, lemon juice, and reserved pasta water as needed to create a light sauce. Stir in the chopped parsley and season with salt and black pepper to taste.
- Serve immediately, garnished with additional parsley and a drizzle of olive oil if desired.
