Steps
- Soak the dried porcini mushrooms in 250 ml of warm water for about 15 minutes, then drain and chop coarsely, reserving the soaking liquid.
- In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and chopped shallot, sautéing until fragrant and translucent, about 3-4 minutes.
- Add the chopped porcini mushrooms to the skillet, cooking for an additional 5 minutes.
- Pour in the vegetable broth and reserved mushroom soaking liquid, bringing the mixture to a simmer. Let it cook for 10 minutes to thicken slightly.
- While the sauce simmers, spiralize the zucchini into noodles and set aside.
