Steps

  1. Soak the dried porcini mushrooms in 250 ml of warm water for about 15 minutes, then drain and chop coarsely, reserving the soaking liquid.
  2. In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and chopped shallot, sautéing until fragrant and translucent, about 3-4 minutes.
  3. Add the chopped porcini mushrooms to the skillet, cooking for an additional 5 minutes.
  4. Pour in the vegetable broth and reserved mushroom soaking liquid, bringing the mixture to a simmer. Let it cook for 10 minutes to thicken slightly.
  5. While the sauce simmers, spiralize the zucchini into noodles and set aside.
  6. Once the sauce has thickened, season with salt and black pepper to taste. Stir in the fresh parsley for added flavor.
  7. In a separate pot, briefly blanch the zucchini noodles in boiling water for 1-2 minutes until slightly tender but still crunchy.
