Ingredients

  • Pasta (spaghetti or linguine) - 200 grams
  • Fresh tomatoes - 500 grams, chopped
  • Garlic - 2 cloves, minced
  • Extra virgin olive oil - 2 tablespoons
  • Fresh basil leaves - 10 grams, roughly torn
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - optional, to taste

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté for about 1 minute, until fragrant, being careful not to burn it.
  4. Add the chopped fresh tomatoes to the skillet and cook for 5-7 minutes, stirring occasionally, until the tomatoes have softened and released their juices.
  5. Season the tomato mixture with salt, black pepper, and red pepper flakes if using, and stir in the torn basil leaves.
  6. Once the pasta is cooked, reserve 1/2 cup of pasta water, then drain the pasta and add it directly to the skillet with the tomato sauce.
  7. Mix everything together, adding reserved pasta water as needed to achieve desired sauce consistency.
  8. Serve immediately, garnished with additional basil leaves and a drizzle of olive oil if desired.
