- Cherry tomatoes, halved - 250 grams
- White wine - 100 ml
- Fresh parsley, chopped - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Lemon zest - from 1 lemon
- Crushed red pepper flakes - 1/4 teaspoon (optional)
Steps
- In a large pot, bring salted water to a boil and cook the gluten-free pasta according to the package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Add the octopus pieces to the skillet and cook for about 5 minutes, stirring occasionally until they start to turn opaque.
- Pour in the white wine and let it simmer for 2-3 minutes until slightly reduced.
- Add the halved cherry tomatoes to the skillet and stir well. Cook for another 10-15 minutes until the tomatoes soften and release their juices.
- Season the sauce with salt, black pepper, and crushed red pepper flakes (if using). Stir in the chopped parsley and lemon zest.
- Add the cooked gluten-free pasta to the skillet, tossing gently to combine with the sauce. Cook for an additional 2-3 minutes to heat through.
- Serve immediately, garnished with extra parsley and a drizzle of olive oil if desired.
