  • White wine - 100 ml
  • Fresh parsley, chopped - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Lemon zest - from 1 lemon
  • Crushed red pepper flakes - 1/4 teaspoon (optional)

Steps

  1. In a large pot, bring salted water to a boil and cook the gluten-free pasta according to the package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add the octopus pieces to the skillet and cook for about 5 minutes, stirring occasionally until they start to turn opaque.
  4. Pour in the white wine and let it simmer for 2-3 minutes until slightly reduced.
  5. Add the halved cherry tomatoes to the skillet and stir well. Cook for another 10-15 minutes until the tomatoes soften and release their juices.

  7. Add the cooked gluten-free pasta to the skillet, tossing gently to combine with the sauce. Cook for an additional 2-3 minutes to heat through.
