Ingredients

  • Pasta (whole wheat) - 150 grams
  • Polenta (instant) - 100 grams
  • Water - 500 ml
  • Olive oil - 2 tablespoons
  • Garlic (minced) - 2 cloves
  • Canned diced tomatoes - 400 grams
  • Fresh basil - 10 grams
  • Parmesan cheese (grated) - 30 grams
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a large pot, bring 500 ml of water to a boil. Add a pinch of salt.
  2. Once boiling, gradually whisk in the polenta, stirring continuously to prevent lumps. Cook for about 5 minutes until thickened, then remove from heat.
  3. In a separate pot, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  4. Add the canned diced tomatoes to the garlic and simmer for 10 minutes, stirring occasionally. Season with salt and black pepper to taste.
  5. Meanwhile, cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
  6. Stir the fresh basil into the tomato sauce just before serving.
  7. To serve, place a generous spoonful of polenta on each plate, top with the cooked pasta, and ladle the tomato sauce over the top. Finish with grated Parmesan cheese.
