- Water - 500 ml

- Garlic (minced) - 2 cloves
- Canned diced tomatoes - 400 grams
- Fresh basil - 10 grams
- Parmesan cheese (grated) - 30 grams
- Salt - to taste
- Black pepper - to taste
Steps
- In a large pot, bring 500 ml of water to a boil. Add a pinch of salt.
- Once boiling, gradually whisk in the polenta, stirring continuously to prevent lumps. Cook for about 5 minutes until thickened, then remove from heat.
- In a separate pot, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the canned diced tomatoes to the garlic and simmer for 10 minutes, stirring occasionally. Season with salt and black pepper to taste.
- Meanwhile, cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
- Stir the fresh basil into the tomato sauce just before serving.
- To serve, place a generous spoonful of polenta on each plate, top with the cooked pasta, and ladle the tomato sauce over the top. Finish with grated Parmesan cheese.
