- Frozen peas - 100 grams
- Fava beans (shelled) - 100 grams
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Vegetable broth - 200 ml
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh basil leaves - 10 grams, chopped
- Nutritional yeast - 2 tablespoons (optional)
Steps
- Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente.
- In a separate pan, heat the olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
- Add the frozen peas and fava beans to the pan, and cook for another 3-4 minutes until heated through.
- Pour in the vegetable broth and bring to a simmer. Cook for 5 minutes until the vegetables are tender.
- Using an immersion blender, blend the mixture until smooth, but leave some texture if desired. Stir in lemon juice, salt, and black pepper to taste.
- When the pasta is done, reserve a cup of pasta water and drain the rest. Add the pasta to the sauce, mixing well. If the sauce is too thick, add reserved pasta water gradually.
- Serve hot, garnished with fresh basil and nutritional yeast if using.
