  • Fresh basil - 10 grams, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese - 30 grams, grated (optional for serving)

Steps

  1. Preheat the oven to 200°C (390°F). Cut the red bell peppers in half, remove the seeds, and place them cut side down on a baking sheet. Roast in the oven for 20 minutes until the skin is charred.
  2. While the peppers are roasting, cook the gluten-free pasta according to package instructions until al dente. Drain and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Add the minced garlic and sauté for an additional minute until fragrant.
  4. Once the peppers are roasted, remove them from the oven and let them cool slightly. Peel off the charred skin and chop the flesh into smaller pieces.
  5. Add the roasted peppers to the skillet with the onion and garlic. Pour in the vegetable broth and bring to a gentle simmer. Cook for about 5 minutes, allowing the flavors to meld.
  6. Using an immersion blender, blend the sauce until smooth. Season with salt and black pepper to taste.
  7. Add the cooked pasta to the sauce and toss well to coat. Stir in the fresh basil just before serving.
