Steps
- Preheat the oven to 200°C (390°F). Cut the red bell peppers in half, remove the seeds, and place them cut side down on a baking sheet. Roast in the oven for 20 minutes until the skin is charred.
- While the peppers are roasting, cook the gluten-free pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Add the minced garlic and sauté for an additional minute until fragrant.
- Once the peppers are roasted, remove them from the oven and let them cool slightly. Peel off the charred skin and chop the flesh into smaller pieces.
- Add the roasted peppers to the skillet with the onion and garlic. Pour in the vegetable broth and bring to a gentle simmer. Cook for about 5 minutes, allowing the flavors to meld.
- Using an immersion blender, blend the sauce until smooth. Season with salt and black pepper to taste.
- Add the cooked pasta to the sauce and toss well to coat. Stir in the fresh basil just before serving.
- Serve warm, garnished with grated Parmesan cheese if desired.
