Ingredients

  • Pasta (e.g., spaghetti or rigatoni) - 200 grams
  • Potatoes - 250 grams, peeled and diced
  • Extra virgin olive oil - 3 tablespoons
  • Garlic - 2 cloves, minced
  • Vegetable broth - 250 ml
  • Parmesan cheese - 30 grams, grated (optional)
  • Fresh basil - a handful, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente, then drain and set aside.
  2. In a separate pot, heat 2 tablespoons of olive oil over medium heat and add the minced garlic, cooking until fragrant but not browned.
  3. Add the diced potatoes to the pot and stir for a couple of minutes, then pour in the vegetable broth. Bring to a simmer and cook until the potatoes are tender, about 15 minutes.
  4. Once the potatoes are cooked, use a potato masher or fork to mash them into a creamy consistency in the broth. If the sauce is too thick, add a bit more broth or water until you reach your desired consistency.
  5. Stir in the chopped basil, and season the sauce with salt and black pepper to taste.
  6. Combine the cooked pasta with the potato sauce, tossing well to coat the pasta evenly.
  7. Serve immediately, drizzling the remaining olive oil on top and garnishing with grated Parmesan cheese if desired.
