Ingredients

  • Pasta (spaghetti or linguine) - 200 grams
  • Black olives (pitted and chopped) - 100 grams
  • Green olives (pitted and chopped) - 100 grams
  • Garlic (minced) - 2 cloves
  • Cherry tomatoes (halved) - 150 grams
  • Olive oil - 4 tablespoons
  • Fresh basil (chopped) - 2 tablespoons
  • Red pepper flakes - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese (grated, optional) - 30 grams

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta is cooking, heat 4 tablespoons of olive oil in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant, being careful not to burn it.
  4. Add the halved cherry tomatoes to the skillet and cook for about 5 minutes until they start to soften.
  5. Stir in the chopped black and green olives, and add the red pepper flakes, salt, and black pepper. Cook for another 3-4 minutes to allow the flavors to meld.
  6. Once the pasta is done, reserve a cup of pasta water and then drain the pasta.
  7. Add the drained pasta to the skillet with the sauce, along with a splash of the reserved pasta water to help combine the ingredients.
  8. Toss everything together and cook for another 1-2 minutes. Add the fresh basil just before serving.
  9. Serve hot, garnished with grated Parmesan cheese if desired.
