- Green olives (pitted and chopped) - 100 grams
- Garlic (minced) - 2 cloves
- Cherry tomatoes (halved) - 150 grams
- Olive oil - 4 tablespoons
- Fresh basil (chopped) - 2 tablespoons
- Red pepper flakes - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese (grated, optional) - 30 grams
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
- While the pasta is cooking, heat 4 tablespoons of olive oil in a large skillet over medium heat.
- Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant, being careful not to burn it.
- Add the halved cherry tomatoes to the skillet and cook for about 5 minutes until they start to soften.
- Stir in the chopped black and green olives, and add the red pepper flakes, salt, and black pepper. Cook for another 3-4 minutes to allow the flavors to meld.
- Once the pasta is done, reserve a cup of pasta water and then drain the pasta.
- Add the drained pasta to the skillet with the sauce, along with a splash of the reserved pasta water to help combine the ingredients.
- Toss everything together and cook for another 1-2 minutes. Add the fresh basil just before serving.
- Serve hot, garnished with grated Parmesan cheese if desired.
