- Parmesan cheese - 40 grams, grated
- Fresh basil - 10 grams, chopped
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Water - for boiling pasta
Steps
- Bring a pot of salted water to a boil and cook the gluten-free pasta according to package instructions until al dente.
- While the pasta is cooking, prepare the walnut sauce by placing the walnuts, minced garlic, olive oil, Parmesan cheese, lemon juice, salt, and black pepper into a food processor.
- Blend the ingredients until smooth, adding a little water if necessary to achieve a creamy consistency.
- Once the pasta is cooked, reserve a cup of pasta water, then drain the pasta and return it to the pot.
- Add the walnut sauce to the pasta, mixing well to combine. If the sauce is too thick, add a bit of the reserved pasta water until desired consistency is reached.
- Stir in the chopped fresh basil and adjust seasoning with salt and pepper if needed.
- Serve immediately, garnished with additional Parmesan cheese and basil if desired.
