  • Walnuts - 100 grams
  • Garlic - 1 clove, minced
  • Olive oil - 3 tablespoons
  • Parmesan cheese - 40 grams, grated
  • Fresh basil - 10 grams, chopped
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Water - for boiling pasta

Steps

  1. Bring a pot of salted water to a boil and cook the gluten-free pasta according to package instructions until al dente.
  2. While the pasta is cooking, prepare the walnut sauce by placing the walnuts, minced garlic, olive oil, Parmesan cheese, lemon juice, salt, and black pepper into a food processor.
  3. Blend the ingredients until smooth, adding a little water if necessary to achieve a creamy consistency.
  4. Once the pasta is cooked, reserve a cup of pasta water, then drain the pasta and return it to the pot.
  5. Add the walnut sauce to the pasta, mixing well to combine. If the sauce is too thick, add a bit of the reserved pasta water until desired consistency is reached.
  6. Stir in the chopped fresh basil and adjust seasoning with salt and pepper if needed.
  7. Serve immediately, garnished with additional Parmesan cheese and basil if desired.
